HOW THE COOKIE CRUMBLES

Asacia has been sharing her love of ice cream sandwiches with her friends and family for nearly three decades. But with the prevalence of gluten-free diets coupled with requests from her celiac friends, in 2008 Asacia began exploring the world of gluten-free baking.
Anyone can make a good cookie, but a good gluten-free cookie is true art, science and craft. To nail the perfect recipe, countless hours were spent and over 2,000 batches were baked and tested. Five soft, chewy, decadent cookies flavours made the cut and in 2014, Asacia started Innocent Ice Cream Sandwiches.

HUMBLE BEGININGS

Toting an ice cream sandwich that would make mom proud, she hit the streets to realize a lifelong dream. Summer of ‘14, she jumped into ice cream production, bought her first tricycle and “pedalled” frozen joy along the Seawall all summer long. As Vancouver’s only gluten-free ice cream sandwich company, our first season was an epic success. Vancouver’s obsession with ice cream was well underway, but its love affair with ice cream sandwiches was only just beginning…

HERE COMES THE SUN

With only one set of wheels, a dessert safe for everyone to eat and wedding, film, private and corporate catering requests flooded in, it was time to expand! 

In 2016, Asacia purchased a food truck, converted the kitchen to run entirely on solar power and “Sunshine” joined the fleet.  Our first permanent location was at English Bay Beach and within a few weeks “Sunshine, the solar powered ice cream truck and “Pedals”, the flower pink tricycle were fully booked for the season.

 The response was overwhelming and our hearts were filled with gratitude. By the end of the season, we had our sights set on the future and our first brick and mortar.
